    Nourishing Chicken Bone Broth

    Ingredients:
    1 whole chicken carcass (or 2-3 pounds of chicken bones)
    2 medium carrots, chopped
    2 celery stalks, chopped
    1 large onion, quartered
    3 cloves garlic, smashed
    2 tablespoons apple cider vinegar
    1 teaspoon black peppercorns
    1-2 teaspoons sea salt (to taste)
    8-10 cups water (enough to cover the bones and vegetables)

    Optional additions: Fresh herbs (like parsley, thyme, or rosemary), fresh ginger, clean veggie scraps, organic chicken feet for extra gelatin, and dried mushrooms

    Directions:
    Roast the chicken bones in the oven at 200°C for 30-40 minutes before simmering and then add to the pot along with the other ingredients.

    Bring the mixture to a boil over medium-high heat. Once it reaches a boil, reduce the heat to low and let it simmer. Skim off any foam or impurities that rise to the surface.

    Let the broth simmer for at least 12 hours. For a richer broth, you can simmer for up to 24 hours. Check occasionally and add more water if necessary to keep the bones submerged.

    After simmering, remove the pot from heat and let it cool slightly. Strain the broth through a fine mesh sieve or cheesecloth into another large pot or bowl, discarding the solids.

    Allow the broth to cool to room temperature. Once cooled, transfer the broth into airtight containers. Store in the refrigerator for up to 5 days or freeze for up to 3 months.

    Eat for energy tip: Bone broth is an excellent choice for the whole family. If feeding this broth to a baby under 12 months, omit the garlic cloves and only use 1 onion.
